4 1 cup watermelon cubes
1 Tbsp lime, juiced
- In a food processor, combine the watermelon cubes and the lime juice and process until smooth. Pour the watermelon mixture into popsicle molds or into small paper cups and freeze until slushy, about 2 hours. Insert popsicle sticks and freeze until firm, an additional 6 hours or longer.
- Freeze watermelon- lime mixture in ice cube trays. When ready to serve, Place 4 cubes into each bowl. Allow cubes to soften at room temperature for 10 minutes. Serve. Garnish with fresh mint leaves or 1 Tbsp Fat Free whipped topping.
- Popsicles or watermelon cubes will last up to 1 week in the freezer.
