2 ounces egg whites, lightly beaten
4 slices canadian bacon
2 ounces non fat mozzarella cheese, shredded
1 medium tomato, chopped, seeds removed
1/2 cup fresh mushrooms, diced
In a small bowl, combine and whisk ingredients together. Heat a medium skillet over medium heat. Spray with Non Stick Cooking Spray. Add egg mixture and cook to desired doneness. Season with salt and pepper to taste.
