3 ounces chicken breasts
1/2 cup mushrooms sliced
1/2 cup zucchini or yellow squash, halved lengthwise and cut crosswise into 1/2-inch pieces
1 ounce non fat mozzarella cheese
- In a large saucepan, bring to a boil 4 cups of water or Fat Free Chicken Broth. Add chicken. Cover and cook for 15 min over medium to med-high heat until chicken is fully cooked.
- While chicken is boiling, in a small saute pan, spray with Non Stick Cooking Spray. Over medium heat, saute zucchini and mushrooms until fork tender. Remove and transfer to serving plate.
- Add chicken to veggies. Sprinkle cheese over chicken or veggies. Season with salt and pepper.
